Kerala Cardamom: The Complete Guide to India's Most Treasured Spice

Green Cardamom (Elettaria cardamomum) holds the title of 'Queen of Spices' for good reason. Primarily cultivated in the Idukki and Wayanad districts of Kerala, this ancient spice has shaped trade routes, colonial histories, and cuisines across the globe for millennia.

Origin and History

Kerala's cardamom cultivation stretches back over 3,000 years. The spice was referenced in ancient Sanskrit texts as a medicinal herb and later became one of the most sought-after commodities of the Arab and European spice trades. Today, India remains one of the top producers alongside Guatemala.

How It's Grown

Cardamom thrives at elevations between 600–1,500 metres in Kerala's Western Ghats, under the dappled shade of forest trees. The climate — heavy monsoon rainfall, warm days, and cool nights — creates ideal conditions for the plant's long fruiting season. Pods are painstakingly hand-harvested before they fully ripen, ensuring the seeds inside retain their volatile oils.

Grades and Quality

Indian cardamom is graded by size and colour: Alleppey Green Extra Bold (AGEB) is the premium grade, with large, uniformly green pods. Quality degrades quickly with exposure to light, heat, and moisture — which is why proper storage in airtight, dark containers is essential.

Culinary Uses

From masala chai to Swedish cardamom rolls, from Middle Eastern coffee (qahwa) to Norwegian julekake, cardamom's versatility is extraordinary. In Kerala cuisine alone, it features in payasam (sweet kheer), biryanis, fish curries spiced with Kerala garam masala, and the iconic chai.

Health Benefits

Cardamom is rich in antioxidants and has been used in Ayurveda for digestive health, freshening breath, and managing blood pressure. Modern research supports several of these traditional uses.
